Ingredients:Lentil Filling:1 Cup Lentils2 Cups Vegetable Broth1/4 Cup Marinara Sauce (at the end once broth has dissolved)Cashew Cheese:1 Cup Pre Soaked Cashews2 Tbsp Nutritional Yeast1/2 Lemon1/2 Tsp Garlic PowderSea salt (To taste) Veggie Filling:1 large Zuchini diced1 Container Mushrooms dicedSea saltPinch OreganoPinch Basil1 Tbsp coconut oilSaute for 7-10 minutesRed Lentil Lasagna NoodlesJar Marinara sauceTo assemble:Put marinara sauce on the bottom of the dishAdd lasagna layer of lasagna noodlesput layer of veggies, followed by lentils, cheese, more noodles, then repeat once more, top with marinara and cheese sauce.Cook in over for 1 hour at 350 coveredEnjoy, its is delicious, my 1 year old as well as my 3.5 year old gobbled it up!
