Luke Shimp, the mastermind behind Minnesota's Red Cow and Red Rabbit restaurants, has officially opened his second Red Rabbit restaurant, on Grand Avenue in St. Paul. The first Red Rabbit came to Minneapolis' North Loop in 2016, and Shimp said it was only a matter of time before the concept traveled to St. Paul.
