We are honored and excited to have a talented guest chef in the kitchen at modPALEO! Matt Martin, Executive Chef at Charlotte's Fern, is a highly regarded vegan and vegetarian chef who is known for showcasing the flavors of the season in his cooking.Chef Martin came on board for a few weeks to create some awesome vegetarian items for modPALEO. It's a challenge to create paleo template vegetarian items, having to avoid grains, oils and sweeteners that many vegan and vegetarian cooks rely on. However, Chef Martin rose to the occasion, creating 10 unique dishes (that we scarfed down after each and every research and development session he did with us).Beginning this week, be sure to check out the BBQ Portobello Steak w/ Millet Cake and Black Bean & Hemp Burger w/ Summer Succotash! Matthew Martin's BioMatt Martin grew up in a small town in New Hampshire. He discovered his love for cooking while spending summers at his grandmother's restaurant in New York. At the young age of twelve, he knew that food had the ability to connect people and form lasting relationships and he knew that he wanted to be a chef. Since those early days at gram's restaurant, Matt has worked in several restaurants in New Hampshire, from pizza joints to country clubs. In 2013, after moving to North Carolina with his girlfriend, Matt started working at a vegetarian restaurant. This was a new style of cooking and one that he had never done before, so naturally, Matt took it on as a challenge. In 2014, he became the executive chef of Fern, Flavors from the Garden. Now, Matt is passionate about promoting the benefits of a plant-based vegan diet. He is also interested in weight lifting, hiking, and playing with puppies everywhere he goes.
