Pear and Macadamia CakeJust the smell of this cake baking in the oven is enough to make me want to climb right into it. Spicy cinnamon, caramelising pear, earthy nuts - the flavours are so enveloping, it's as if I'm being hugged by a cake. God it's so good. This is the kind of cake that makes you wish for a rainy Sunday afternoon, a really good book and jazz in the background. It's what happy days are made of.3 cups self-raising flour½ teaspoon baking powder1 teaspoon bicarbonate of soda1 teaspoon salt2 teaspoons cinnamon¼ teaspoon ground ginger¾ cup of macadamia nut oil2 cups brown sugar3 eggs2 pears, peeled and diced2 teaspoons vanilla extract1 cup macadamia nuts, choppedPreheat oven to 180 degrees Celsius. Grease two loaf tins and set aside.In a mixing bowl, sieve together flour, baking powder, bicarbonate of soda, salt, cinnamon and ginger. Set aside.Cream the macadamia nut oil, sugar and eggs together. Add to the flour mixture and mix. Stir in the pears, vanilla and macadamia nuts.Spoon the mixture into the greased loaf tins and bake for about 45 minutes. To check if it's ready, insert a knife or skewer into the middle.
