Gluten Free Candy Cane CupcakesNothing beats success. My Pumpkin Cheesecake muffins were so good I decided to try for a Candy Cane cupcake. And boy are they yummy. Make up a batch for your holiday party and watch them disappear. Oh, and don't tell anyone they are gluten free. They will never guess.Makes 12 muffinsIngredients1/2 cup Java Frost Swiss White Cocoa drink mix1/2 cup crushed candy canes1 1/2 Gluten Free All Purpose Baking flour (I used Bob's Red Mill)1/2 cup Rice Flour3/4 cup Sugar2 tsp. Baking Powder1 1/2 tsp. Xanthan Gum1 tsp. Sea Salt1/2 cup Butter (melted) or oil of choice1/2 cup Milk or liquid of choice (rice milk, soy milk, almond milk...)2 EggsDirectionsPreheat oven to 375 degrees F.In a large bowl combine dry ingredients. In a separate bowl blend the eggs, milk and melted butter or oil and mix well. Add the dry ingredients and mix until just combined (over mixing will make the cupcakes tough).Put cupcake cups in cupcake pan and fill with the batter. Bake for 20 minutes or until a wooden pick inserted in center of 1 of the muffins comes out clean.When done remove cupcakes from pan and let cool. Frost with cream cheese icing and top with colorful sprinkles.VariationAdd some semi sweet mini chocolate chips or white chocolate chips to the batter. A little chocolate never hurt anyone!
