Check out this Ranchero Wrap Casserole recipe to bring that same great deli flavor right to your kitchen.Ranchero Wrap CasseroleIngredients:1 whole rotisserie chicken pulled (yields about 1 pound)1 cup ranch dressing½ cup heavy cream½ cup evaporated milk1 cup diced pickled jalapeño1 cup pico de gallo1 yellow onion diced and sauteed (@ 5 min, med heat, 1 Tbsp Olive Oil)1 tbsp chili powder1 tsp paprika4 cups cheddar cheese5 tortillas1 avocado choppedJalapeño Ranch Dressing for garnishDirections:Preheat oven to 350° F.Pull chicken apart and set aside.In large bowl, mix ranch dressing, heavy cream, evaporated milk, pickled jalapeño, pico de gallo, yellow onion, chili powder and paprika.Add chicken to mixture and stir.In a baking dish, layer 2 tortillas, ½ the chicken mixture and 2 cups cheddar cheese.Repeat layers.Bake covered for 25 minutes.Cut 1 tortilla into strips and fry.Remove lid and bake an additional 5 minutes.Garnish with fried tortilla strips, avocado and jalapeño ranch.Serve and enjoy!
